👏🏼👏🏼👏🏼The easiest shredded chicken recipe is in a @vitaclay cooker. The flavor and tenderness of a slow cooker in half the time.

Directions:

  1. 🧅 Add whatever veggies you have on hand, celery, carrots, onions, leeks etc.. to the pot & top with BONE IN chicken thighs. It’s important to use bone-in because we will not be using any chicken broth for this recipe unless it’s homemade chicken broth. The bones in the clay pot will make the most delicious broth.
  2. 🌶️Add your seasonings, I like to add oregano, rosemary, thyme, sage, salt, pepper, and a little bit of apple cider vinegar to help those bones really release the collagen into the broth.
  3. 🧄Add 2-4 cups of water. I’ll add 2 cups of water if I’m only making shredded chicken. If I want to make rice in it after I will add 4 cups of water so I have enough liquid for the rice.
  4. 🌶️Set on soup mode for anywhere between 2 to 4 hours, the longer it cooks the easier the bones will be to remove.
  5. 🥕Once it has completed the cooking cycle, remove the chicken shred it up and you have easy shredded chicken ready for the rest of the week. I like to add back into my broth 1 cup of wild rice. Close the cooker & set it on the brown rice setting. Once it’s done throw all the shredded chicken back in for a healthy shredded chicken & rice dish.
