Savory Roasted Kabocha With Chickpeas in Lemon Curry Sauce

Enjoy this savory roasted kabocha / butternut squash and chickpeas in lemon curry sauce, cooked in Vitaclay for 40 minutes. Helps weight-loss, nourish your skins and hair, protect your eyes from long screen time.

Ingredients
  • 1 butternut squash or half Kabocha- peeled, seeded, and cut into 1-inch cubes
  • 1 cup cooked chickpeas
  • 1/2 cup water
  • 2 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1/2 onion, sliced
  • 1 tablespoon curry or turmeric powder
  • 1 lemon juice
  • salt and ground black pepper to taste (feel free to add extra pepper for spicy taste)
Directions
1. Sauté onion garlic until translucent then transfer to clay pot. Mix well all ingredients in your clay pot. Squeeze lemon juice into the mixture and stir to mix well.
2. set on stew to cook for 40 minutes.
