Rustic Chicken Cacciatore: Your Authentic One-Pot Stop in Clay!

Sometimes dishes with really fancy-sounding names, such as Beef Stroganoff, Pad Thai, and Ratatouille fool us into thinking that we couldn't ever possibly make something like that in our own kitchens, at least not without help.

I, too, used to be intimidated by these exotic-sounding dishes, thinking I couldn't cook these things from scratch.

Then I realized: if other people can make them (and have been making them for hundreds of years), so can I!

All I need is ingredients and a pan, just like them! Then after discovering VitaClay, I found many of these recipes are made so much easier: one pot and I'm done—and the results are amazing: texture, taste and nutrition is off the charts!

This chicken cacciatore recipe is just one more example of a healthy, rustic, authentic meal that is oh-so-easy, and delicious.

Ingredients for Authentic Chicken Cacciatore in Clay:

  • 1½ lb chicken (boneless is easiest, but I like both white and dark  meat)
  • cbroth
  • 1 lb mushrooms, sliced
  • 2 cloves garlic, minced
  • 1large or 2 small tomatoes, chopped
  • ¼ t dried oregano
  • sea salt and black pepper, to taste

Directions for Authentic Chicken Cacciatore in Clay:

  1. Add everything to the clay pot
  2. Close and cook on "fast" setting for 45 minutes to 1 hour
  3. Season with salt and pepper to taste
  4. Serve over rice or other grain, covered in sauce
  5. Great with a slice of crusty sourdough bread

This quick and easy lasagna recipe is cool because it uses ravioli, so it's so much quicker than traditional lasagna, but with the same layering technique and the same general outcome.

I love that it uses white sauce instead of red, because sometimes I'm just in the mood for that kind of creamy goodness.
