Quick 2 Person “Fast Food” Sausage, Kraut & Potatoes Recipe

I've been on a fast food kick lately. No, I don't mean I've been driving through fast junk food places, eating terrible food with awful additives on a regular basis. I've been playing around in my own kitchen, trying to streamline the cooking process.

To be sure, there are times when a special meal requires thought, planning, foresight, and plenty of time in the kitchen: preparing, cooking and eating, then cleaning up. But most days I don't have that kind of time. So on the days when I do have a little extra time, I love to get ready for the hectic days, giving myself something to grab and go, or at least something that doesn't take too much time to heat up and throw together.

To that end, I like to have things like sausage, meatballs, slices of cheese and sourdough bread in the freezer, so I have options of things to eat when time is running tight. Or I can put together this satisfying and delicious “fast food” meal in no time in VitaClay. I always have some sauerkraut handy, and I like to make big batches of it and add it to all of my meals for the probiotic benefits. Sauerkraut is also great for dishes with sausage or pork, and makes a great side dish or “bed” for the meat, and helps with digestion as well.

This recipe is just enough for 2, but can easily be doubled for 4, or halved for 1 (though I'd usually rather make more than less and eat the leftovers over the following week).

Ingredients:

  • 2 links of your favorite sausage, halved lengthwise and cut into 1 or 2-inch pieces
  • ¼ c broth
  • 2 small red or yellow potatoes, halved and sliced
  • 1 red onion, thinly sliced
  • 3/4 cup sauerkraut
  • 3/4 cup dry white wine
  • a few shakes of turmeric (because I add it to everything)
  • 1/4 teaspoon freshly ground pepper
  • 1/8 teaspoon caraway seeds
  • 1/2 bay leaf
Directions:
  1. Add everything except sauerkraut into the clay pot
  2. Close, seal and cook on “stew” setting for about 30 minutes (make sure the potatoes are soft)
  3. After it beeps, add in the sauerkraut and allow to steam on “warm” for about 15 minutes
  4. Remove the bay leaf before serving
Garnish with a bit of chopped parsley or cilantro, if desired
