Pumpkin Chili

Pumpkins are in season! Enjoy your pumpkin pie, pumpkin pie cheesecake, pumpkin spice lattes and now, introducing the pumpkin chili! This is the perfect intersection of comfort food and health food and is sure to keep you warm!

2 lbs. lean ground beef
1 large white onion, diced
1 green bell pepper, diced (optional)
2 (15 ounce) cans kidney beans, drained
1 (46 oz) can tomato juice
1 (28 oz) can peeled and diced tomatoes with juice
1/2 cup pumpkin, diced
1 Tbsp pumpkin pie spice
1 Tbsp chili powder
1/3 cup white sugar

In a large pot over medium heat, brown beef; drain.
Stir in onion and bell pepper and cook 5 minutes. Stir in beans, tomato juice, diced tomatoes and pumpkin puree. Season with pumpkin pie spice, chili powder and sugar.

Add all ingredients from pot into slow cooker. Cook on Low Setting for 30 minutes.
