Hearty Italian Tomato Sausage Spinach Stew

This hearty Italian stew makes a great light dinner with a side of crusty sourdough, or can be an excellent starter for an Italian pasta dish. It’s warm, comforting and delicious. And when it’s made in VitaClay, you can set it and forget it. You can go run errands or take a nap while dinner cooks itself!

Adapted for VitaClay from Weight Watchers, you know this recipe will be good, and healthy! And you can customize it with your favorite sausage and add in other veggies if you prefer.

Ingredients:

  • 6 oz Italian sausage (any sausage can be used)
  • 1- 8 oz package sliced fresh crimini mushrooms
  • 4 garlic cloves, thinly sliced
  • 2 14.5oz cans unsalted fire-roasted diced tomatoes, undrained
  • 3 c broth
  • ½ t black pepper
  • ¼ t real salt
  • 5 oz baby spinach
  • 2 t apple cider vinegar (raw is best)
  • ¼ c torn fresh basil leaves
  • 1 oz shredded fresh Parmesan cheese (about ⅓ cup) (optional)

Directions:

  1. Brown the sausage with garlic and mushrooms in a cast iron skillet, then transfer to Vitaclay
  2. Add remaining ingredients except spinach, basil, parmesan and vinegar
  3. Set on “soup” or “slow” setting for 1 hour.
  4. At the end of the cooking cycle, stir in spinach. Cover to cook for 5 minutes.
  5. After the cooking cycle is finished, stir in the vinegar.
  6. Divide the soup in 8 bowls; sprinkle with the basil and Parmesan if desired.
