Gluten-free Celtuce with Chicken Mushrooms

Delicious gluten-free celtuce with chicken or mushrooms for vegetarian.

Made with only 4 or 5 ingredients- chicken or mushrooms, celtuce, arrow root flour and ginger! 😋

Celtuce, also known as Stem Lettuce and Celery Lettuce, an excellent source of Vitamins A and C, and the mineral manganese. It is also a good source of Vitamin B-9 (Folate) and offers all the other B's (except B-12), as well as the minerals calcium, copper, non-heme iron, phosphorus, potassium, selenium, zinc and manganese, which is important for metabolism, calcium absorption, and regulating blood sugars. Just one cup of magnesium provides 30 percent of the daily value , according to women’s health magazine.

The bitter flavor of Celtuce is anti-inflammatory which helps clear the heat from the body, stimulate appetite and digestion.

Note: If you can not get celtuce, feel free to substitute it with bitter melon, or cauliflower or broccoli, etc.

Ingredients:

  • 3 cups chicken cubes or mushrooms slices

  • 3 cups celtuce, peeled and sliced

  • 2-3 tablespoons arrow root flour

  • 3 tablespoons ginger, threaded

  • 2-3 tablespoons olive oil

  • 1/2 lemon juice


Directions:

  1. 🥣 mix arrow root flour with water in a bowl until it forms a paste. Use half of the flour paste to mix with chicken cubes.
  2. 🥣add 1 cup water in your vitaclay #clay pot. Add celtuce on top of the water layer.
  3. 🥣set on stew to cook for 20 minutes and cover the cooker to cover to cook.
  4. 🥣(optional) store fry the chicken cubes coated with arrow root flour and ginger lemon juice until chicken is cooked.
  5. 🥣about 10 minutes of cooking celtuce, add the rest if arrow root paste and stir well with celtuce inside your clay pot. Place cooked chicken or mushrooms on top. Continue to let the timer run through the course. Total 20 minutes.


Enjoy it as a keto meal or over rice.
