Energy-Reviving Beef Noodle Soup in VitaClay Slow Cooker

Place ribs in your VitaClay slow cooker. Add onion, celery, carrots, garlic, tomatoes and bay leaves over the ribs. Pour broth, cover and cook on “stew” for 2-3 hours or until meat is tender.
Once the beef is tender, remove from the slow cooker. Use a fork to remove the beef from the bones into small pieces. Remove and discard the bay leaves from the slow cooker.
Add egg noodles to the broth and cook for another 10 to 15 minutes or until the noodles are cooked.
Stir meat back into your cooker and season with salt and pepper. Serve with green onions on top.
