Eat More “Rainbows”

Eat my “rainbows”... ☺️🌸❤️so easy tasty and healthy! Eat as many colors of veggies when possible, as they represent different vitamins minerals. Just add 1 cup water and veggies and set to stew to Cook only for 15 minutes or 20 minutes. Add olive oil and sea salt to taste in the end. A perfect side dish or make it a clean eating meal by adding a mix of spices along with coconut milk to make it a full vegetarian meal! 

Ingredients

  • 3 cups squash or pumpkin, sliced or cut in cubes
  • 2 cups carrots, cut in inches
  • 3 cups greens mustard, or kale, or arugula or collard greens or choose your favorite colors of veggies
  • 1 cup water (if use vm7800 model add 3 cups water)

Directions

Add in all with water and set to cook on stew or fast for 15 to 20 minutes. Greens can be added in the last 5-10 minutes to preserve crisp in color.
