Easy, Quick, Festive Chicken Fiesta Tortilla Soup Recipe!

Sometimes I just want dinner to be easy. I don’t want to think about it. I want it to be ready. I don’t think I’m alone—that’s why fast food places do so well, right? We’re tired at the end of the day, and we just don’t want to think about making dinner, let alone do it. But alas it’s January now and we’ve just vowed to cook more meals at home.

It’s healthier! It’s cheaper! It’s better in every way! But we have to think about it. And do it. So now that we’re getting back into our every-day routines after the holidays, let’s kick-start those resolutions with some easy recipes that we can throw together and not think about it. That’s why I love VitaClay. It lets me put all of the ingredients in the pot, let it cook, and come home to a fully-cooked, whole-food meal. Here’s a great recipe for chicken tortilla soup. It’s easy, hot and delicious!


  • 6 chicken thighs
  • 1 cup broth
  • 1 onion, coarsely chopped
  • 1 cup salsa
  • 1 t ground cumin
  • 3 T lime juice (juice from 1 lime)
  • ¼ to ½ cup chopped cilantro
  • Handful of tortilla chips
  • ¼ to ½ cup shredded cheese
  • ½ ripe avocado, diced
  1. Throw all soup ingredients except lime juice into the VitaClay pot and cook on “soup” setting for about 1 hour
  2. Take out large onion pieces. Shred chicken with forks.
  3. Add lime juice and allow to sit for another 5 minutes
  4. Serve and garnish with cilantro, tortilla chips, cheese and avocado.
