Easy Cilantro Lime Rice (Video Recipe)

CILANTRO LIME RICE RECIPE

Cook Time: 30 minutes

Yield: Serves 4 I

NGREDIENTS:

2 Tbs olive oil

1 1/2 cups basmati long grain white rice (or brown rice)

1 clove garlic, minced

1 1/2 cups water for white rice or 3 cups water for brown rice

1 teaspoon salt

Zest of one lime

3 Tbsp lime juice

1 cup lightly packed chopped cilantro, leaves and tender stems

Rinse rice then add white or brown rice and water in VitaClay Pot. Cover, seal, set on “White” or “Brown” rice cooking depending on white or brown rice. (Optional) At end of rice cooking cycle, let sit in “Warm” for additional 15 minutes or so. At end of cooking cycle, heat the olive oil in a saucepan on medium high heat. Add the garlic and cook a minute more. Add the garlic and olive oil mixture to the cooked rice in VitaClay pot and stir in lime juice, salt(or salt to taste), lime zest and toss with chopped cilantro. Then serve!
