CREAMY PESTO MAC AND CHEESE WITH SPINACH

Ingredients

  • 2 cups uncooked macaroni 
  • 2 Tbsp butter 
  • cups whole milk 
  • 2 cups chicken broth or water
  • 1/2 cup grated Parmesan 
  • 1/4 cup basil pesto 
  • 1/2 tsp salt 
  • Freshly cracked pepper 
  • 1/2 lb. frozen spinach 

Directions:

  1. Add macaroni, butter, milk and broth (or water) in vita clay pot. Set on Stew or Fast (add 1 cup additional broth) to cook for 20-30 minutes. 
  2. Whisk the Parmesan and pesto into the pasta. Season the pasta with salt and freshly cracked pepper. 
  3. Add the thawed spinach and stir until everything is combined and coated in sauce. Serve immediately.
