Comfort Mac N' Cheese Like Never Before in Clay

Macaroni and Cheese has become the quintessential comfort food. There’s just something about that rich, cheese, carby goodness that makes us feel so good (at least while we’re eating it). This is one of those foods that we really don’t dare eat too often, but when we do, we should really enjoy it. Like, why would we spend all of those carbs and calories on a boxed and powdered version of mac & cheese?

Well, I’m here to tell you that it can be just as easy (or easier!) to make your own home-made mac-n-cheese. And, of course, as with anything you make from home, you control the ingredients completely, unlike when you eat food from a restaurant or a pre-packaged or processed food product from the store. 

So you can make your mac-n-cheese gluten free, or adjust it however you need to according to your preferred diet.

You can also source the best quality ingredients possible, such as grass-fed raw butter and cheese, ancient grain pasta, raw organic milk and organic spices.

     

Ingredients:

  • 2 T grassfed butter, melted (more is better!)
  • 1 ½ cups uncooked pasta (I like this one)
  • 1 cup water or broth
  • 3 cups organic milk
  • 10 oz grated cheese (you might want to grate it yourself to avoid this additive)
  • ½ t real salt
  • ¼ t pepper

Directions:

  1. Add all ingredients to the clay pot.
  2. Close, seal and cook on “stew” setting for about 20 minutes (depending on the type of pasta, it could be a few more or less for al dente)
  3. Garnish with more cheese
It’s also easy to sneak in other ingredients to this dish: cauliflower, squash, or other veggies that can blend well with pasta. It all tastes soft and gooey and delicious!
