Fruity Pork Chops Slow Cooked in Clay

I love it when my old stand-by recipes get jazzed up with fruit. Fruit with meat adds an unexpected sweetness and usually some tartness too—similar to sweet and sour (which you know I love). So any new recipes that incorporate both fruit and meat are a must-try in my book.

And anything I can adapt to using with VitaClay is even better—because VitaClay not only makes everything easier, but it makes it all tastes awesome with so little effort! So try this easy, fun fruited pork chop recipe next time the pork is on the menu. You may just have a new family favorite!

     

Ingredients:

  • 2-3 lb boneless pork loin chops, (“1 inch thick)
  • 1/4 cup broth
  • 1 t dried thyme, crushed
  • ~14 oz. mixed dried fruit
  • 1 red sweet pepper, seeded and sliced
  • 1 c barbecue sauce
  • Fresh thyme (optional)

Directions:

  1. Place chops and broth in VitaClay pot. Sprinkle with thyme and add dried fruit and sweet pepper, then coat with barbeque sauce.
  2. Cover, seal, and cook on “stew” setting for 1 hour. 
  3. Transfer chops to a serving platter and spoon sauce over each of the chops
  4. Garnish with fresh thyme

 Note: If you are using VM7800 cooker model, add 2 cups for cooking for an hour or 1 cup for 30 minutes.

This is really great served over a bed of sauerkraut.
