Clay Casserole Creations: Broccoli Casserole in One Pot!

It seems like a good casserole is everyone's favorite: it's the original one-pot dish, and the combination of flavors and textures always adds up to a delicious, satisfying meal.

Whenever I come across a new recipe (especially one pot recipes, but really any recipe in general) I try to adapt it to VitaClay. It just makes sense to me: VitaClay makes every recipe taste better, in my opinion.

There's something magic in that clay! And if it's true that it preserves and even adds nutrients into the food, well: I'm sold! I like it much better than my old slow cooker, because that one seemed to make every dish tasteless and soggy.

I mean, sure: slow cookers are convenient and make things easier, but if the food doesn't taste good, what's the point? I like that VitaClay cooks faster and that the taste and texture is amazing every time. I will definitely never go back to my old slow cooker (anyway, I donated it, so I couldn't if I wanted to!).

     

Ingredients for One Pot Broccoli Casserole:

  • 1 C + ¼ C broth
  • 2 lb broccoli, chopped
  • 10-12 oz condensed cream of mushroom soup
  • ½ lb roasted red bell peppers, chopped
  • ½ bar cream cheese (4-6 oz)
  • 2 T sour cream (optional)
  • ½ c shredded cheese
  • 1 ½  t fresh squeezed lemon juice
  • 2-3 cloves garlic, minced
  • ½ t black pepper
  • 2 T tapioca or other starch (optional)
  • several dashes of turmeric powder (because I add it to everything)

Directions for One Pot Broccoli Casserole:

  1. Blend starch with ¼c broth until well incorporated
  2. Add all ingredients to clay pot, stirring well
  3. Close and cook on "fast" setting for 30 minutes
  4. Delicious over rice or with sourdough bread
