Cilantro Lime Rice Like Never Before in Clay

Rice recipes are suitable only for the rice setting on VitaClay Models VF7700 and VM7900 series. 

In the past we've posted several rice recipes.

After all, rice is pretty much half of what we do.

We've posted tips on how to make the perfect rice in VitaClaywith troubleshooting tweaks for any problems you might encounter.

We've posted one pot rice recipes, both vegetarian and omnivorous, coconut rice that is amazing with any Asian dish, and my favorite rice dish of all time is Zhua Fan (lamb rice).

So when we find a new idea how to make rice with a new flavor twist or that goes particularly well with a certain cuisine, we try it right away.

This cilantro-lime rice is delicious: it's got just enough tang and flavor to make it really interesting. It actually reminds me a bit of the rice you get at Chipotle, probably because of the cilantro, but the lime gives it a really nice kick. And it's better.

It goes well with any Mexican dish, and can bring new flavor to your old stand-bys as well—a great base grain for stews or stir fries as well.

Ingredients:

  • 2 cups rice of your choice
  • 2 cups water or broth
  • 2 T butter (pastured or grass-fed is most nutritious)
  • 1 T coconut oil
  • a few shakes of powdered turmeric (because I add it to everything)
  • a dash of ground cumin
  • ½ t ground black pepper
  • ½ bunch cilantro, chopped
  • ½ lime, juiced
  • 4 oz green chiles, diced (optional)

Directions:

  1. Add rice, liquid, spices and butter to the clay pot
  2. Close, seal and cook on “rice” setting (white or brown depending on type used)
  3. After it beeps, allow it to rest for 15 minutes before opening (it will steam the rice through and taste much better than if you open it right away)
  4. Stir in the lime juice and cilantro just before serving.
  5. Serve chiles on the side as a garnish, if desired
