Cauliflower potato Curry soup in VitaClay stock Clay pot

Aloo Gobi Matar Curry | Cauliflower Potato Curry | Gobi Curry In VitaClay instant crock stock pot  

Ingredients

3 medium potatoes peeled and cubed
½ cauliflower cut into medium-sized florets
1 tsp cumin powder
1 tbsp coconut oil
1 large onion finely chopped
1 tbsp grated fresh ginger and garlic
½ tsp Turmeric powder
½ tsp Kashmiri chili powder or to taste
1 tsp Garam masala
½ tsp Coriander Powder
2 medium tomatoes, diced or substitute with tinned tomatoes
salt to season
⅓ cup Coconut Milk
2 cups Water

Directions

  1. In a medium saucepan over a medium heat, add coconut oil or olive oil to sauté onion and garlic for a minute or 2. Transfer to your vitaclay claypot.
  2. add the rest of ingredients and mix well in your vitaclay quick slow cooker stock pot, make sure to add 2 cups water. 
  3. Set in fast to cook for 1 hour.
  4. Add a squeeze of lemon juice at the end to balance the flavors.
