1. Add the cod and sprinkle with salt and pepper 2. In a s sauce pan over a medium high heat, add butter, olive oil, garlic and cajun spice mix and stir for a couple of minutes. 3. Add 1/2 cups water, diced tomatoes, mushrooms in yourvitaclay. Place the cod on top of the tomatoes mushrooms. Top with Cajun garlic butter sauce. 4. Set on stew to cook for 15-20 minutes or until the fish is opaque and flakes easily.
