CAJUN GARLIC BUTTER COD in tomato mushroom sauce.

Cooking light for today's lunch! Yum! 😋


Ingredients:

  • 3 cod filets cut in half
  • salt and pepper
  • Cajun Garlic Butter Sauce:
  • 1/4 cup butter melted
  • 1 Tablespoon olive oil
  • 3 garlic cloves minced
  • 1 Tablespoon Cajun Seasoning
  • 1 fresh large tomato, diced
  • 1 cup mushrooms, sliced
Directions:

1. Add the cod and sprinkle with salt and pepper
2. In a s sauce pan over a medium high heat, add butter, olive oil, garlic and cajun spice mix and stir for a couple of minutes.
3. Add 1/2 cups water, diced tomatoes, mushrooms in your vitaclay. Place the cod on top of the tomatoes mushrooms. Top with Cajun garlic butter sauce.
4. Set on stew to cook for 15-20 minutes or until the fish is opaque and flakes easily.
