2poundsyukon gold potatoeswashed and peeled
2teaspoonssea salt
1tablespoongrassfed butter or ghee
½large yellow oniondiced
3tablespoonschicken bone broth
1tablespoonavocado oil
8garlic clovesminced

3tablespoonsgrassfed butter or ghee
sea salt and black pepperto taste

Directions
Place the potatoes in the VitaClay cooker and cover them with 3 cups of water.
Set on Stew to cook for 30-40 minutes. Add 2 teaspoons of sea salt. When potatoes are cooked, drain some excess liquid and set the clay pot on side.
In the mean time, in a large sauce pan over high heat, melt 1 tablespoon of butter. Add in diced onion and lower the heat to medium-low. Cook for 4-5 minutes until soft. Add in bone broth and continue cooking for 4-5 minutes until the liquid begins to thicken up a bit. Stir frequently.
Add oil to sauce pan and sauté garlic cloves on low heat for 3 minutes, stirring frequently. Transfer them to your clay pot.
Mash the potatoes in the clay pot using a potato masher.
Stir everything together to combine thoroughly. Taste the mixture and adjust the seasonings as needed.
