Beef Enchilada Soup

Indulge in this robust soup brimming with ground beef, beans, corn, tomatoes, and green chiles, all enveloped in a lusciously seasoned enchilada broth. Enhance the experience by serving it alongside sour cream, cheese, and chips for the ideal family-friendly feast.

Ingredients

  • 2 lbs lean ground beef
  • 3 tbsp taco seasoning
  • 1 onion
  • 2 cups red enchilada sauce
  • 4 cups Beef Bone Broth 
  • 2 cups diced tomatoes, not drained
  • 2 cups sweet corn, drained
  • 2 cups black beans, not drained
  • 4 oz green chiles, not drained

Toppings (optional)

    • Corn tortillas cut into strips
    • Sour cream
    • Cheddar cheese shredded
    • Cilantro diced

Directions

  1. Combine the ground beef, taco seasoning, and diced onion in a skillet and brown over medium high heat until no longer pink. Drain any grease or excess liquid. Transfer to your vita clay pot.
  2. In your Vita clay pot, add the Beef Bone Broth, enchilada sauce, tomatoes, corn, black beans, and green chiles to the cooker. Stir everything to combine.
  3. Set on "Stew" or "Fast" to cook for 30 minutes. 
  4. Serve the hot soup with corn tortillas cut into strips and your choice of sour cream, cheddar cheese, or chopped cilantro.
