Anti-Inflammatory Pumpkin Mung Beans Soup

Acute, or short-term, inflammation occurs when you hurt yourself or get sick, like when you get a cut, break a bone, or come down with a cold. But when you’re in a state of chronic inflammation—which can be triggered by eating unhealthy foods that stimulate an inflammatory response in the blood—it can lead to a whole host of health problems.




  • 2 cups pumpkin or butternut squash, peeled, cut in cubes
  • 2/3 cup mung beans
  • 1/3 cup barley
  • 5-8 cups water

1. Add all in your clay pot and set on soup to cook for 2 hours.
