I'm not sure I've ever met anyone who doesn't like Beef Stroganoff.

It's a classic American-style dinner that is delicious and satisfying.

It practically has a grocery aisle dedicated to it: processed box meals like hamburger helper began by “simplifying” a beef-and-noodles recipe into a one-skillet meal-in-a-box.

But do we really need a box to make this crowd-pleaser? Will it make anything faster, simpler or easier, given that this recipe is a one pot meal?

I don't think so.

In fact, with VitaClay this dish is so quick and easy to prepare, I believe it would be faster to make it from scratch than with the boxed version.

And the results can't even compare.

Ingredients for One Pot Meal: Beef Stroganoff:

  • 1 lb grass-fed stew meat or ground beef/bison
  • ½ red onion, chopped
  • 3/4 c broth
  • 1 T Worcestershire sauce
  • 8 oz mushrooms, sliced
  • 1 c milk or cream (get organic to avoid hormones, antibiotics and chemicals!)
  • salt & pepper to taste
  • 4 oz cream cheese or sour cream

Directions for One Pot Meal: Beef Stroganoff:

  1. Add all ingredients except for milk to clay pot (If you want to brown and sautee the meat and mushrooms beforehand, feel free--it does add flavor, but it's not crucial)
  2. Close and cook on "fast" or "stew" setting for an hour.
  3. Open and thoroughly stir in the milk and cream cheese before serving
  4. Serve over pasta, rice, quinoa, (Pasta can also be cooked in the pot, adding it in during the last 10 minutes of cooking)
  5. Enjoy your one pot meal!

This tasted great but the stew meat I purchased from Whole Foods was very chewy. Any suggestions to make the stew meat more tender?
