Easy Corned Beef and Cabbage In VitaClay Fast Slow-Cooker

Have you ever made the best corned beef recipe in your VitaClay cooker? Get ready to serve this delicious yet easy to prep corned beef recipe to your family and make this Irish-American dish a favorite all year long- not just on St. Patrick's Day. I love the flavor of the tender beef and the succulent sweet taste of cabbage merged in this dish. Adding more excitement is the potatoes and carrots perfectly cooked while dinner is getting ready in just an hour! Enjoy cooking!

Ingredients:

  • 3 pounds corned beef brisket with spice packet
  • 10 small red potatoes
  • 5 carrots, peeled and cut into 3-inch pieces
  • 1 large head cabbage, cut into small wedges
  • Broth

Directions:

1. Place corned beef in your VitaClay pot and cover with water or broth. Add the spice packet that came with the corned beef.
2. Set on slow or soup to cook for 2 hours.
3. Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 15 more minutes. Remove meat and let rest 15 minutes.
Place vegetables in a bowl and cover. Add as much broth. Slice meat across the grain.
