30 Minutes Tasty Chicken Tortilla Soup Made in VitaClay

I used the leftover chicken and its broth made the night before, threaded and added the following ingredients. It’s really simple and easy! I used taco seasoning to replace all the spices here! Yum!

Ingredients:

  • 2 tablespoons olive oil
  • 1 small onion, peeled and chopped
  • 2/3 cup fresh chopped cilantro, divided
  • 3 cloves garlic, minced
  • 4+ cups chicken broth
  • 2 cups diced tomatoes or "fire-roasted" tomatoes
  • 2 cups cooked chicken, threaded
  • 3/4 tablespoon ground cumin
  • 1/2 tablespoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 1-2 bay leaves
  • 1 carrot, thinly sliced
  • 1 cup of corn
  • 1 1/2 cups shredded Monterey jack cheese
  • 1-2 avocados, diced
  • 10-ounce bag of tortilla chips
Directions:
1. Sauté onion in a saucepan on medium-high heat for a few minutes. Then transfer to you VitaClay (optional)
2. Add all ingredients in your VitaClay. Set on stew to cook for 30-40 minutes.
3. Stir in half the cheese and 1 cup crushed tortilla chips.
Top with tortilla chips, avocado and cilantro to serve.
