Here’s a quick and easy recipe for a delicious, vegetarian Quinoa and black bean salad: perfect for a quick, delicious, healthy meal that will fill you up without weighing you down. Eat it at home, or take it to work or school: it’s the perfect meal!

Just cook one cup Quinoa with 2 cups water or broth on the regular rice setting: it will be done to perfection in about 30 minutes. After it cools, mix with 1 cup of black beans, 1 cup fresh chopped tomatoes, a squeeze of lemon juice, a couple of chopped green onions, some sea salt and 1 or 2 tablespoon of olive oil. Mix well, top with cilantro and mozzarella and serve!
