Vegetarian Dish - Black-Bean and Tomato Quinoa 

Quinoa is the newest ancient super-grain on the health scene, and VitaClay makes cooking Quinoa easy!  

Quinoa, once renowned as the gold of the Incas, has long been recognized for its nutritious properties. The Incans of South America regarded it as the mother of all grains, and used it in sacred rituals. Quinoa is rich in amino acids and contains a complete protein, making it a perfect addition to a vegan lifestyle. Gluten-free, it is also a boon to those with food allergies. An excellent source of protein, iron, calcium, potassium and copper, it is a great way to feed your body accessible nutrients that can be difficult to absorb from other foods. It is also high in fiber and a recommended addition to a healthy diet.

Here’s a quick and easy recipe for a delicious, vegetarian Quinoa and black bean salad: perfect for a quick, delicious, healthy meal that will fill you up without weighing you down. Eat it at home, or take it to work or school: it’s the perfect meal!

Just cook one cup Quinoa, I use Alter Eco Fair Trade’s Pearl Quinoa, with 2 cups water or broth on the regular rice setting: it will be done to perfection in about 30 minutes. After it cools, mix with 1 cup of black beans, 1 cup fresh chopped tomatoes, a squeeze of lemon juice, a couple of chopped green onions, some sea salt and 1 or 2 tablespoon of olive oil. Mix well, top with cilantro and mozzarella and serve!
