Try this Classic Goulash, American-style and Amazing in Clay!

Goulash is a fun, delicious and easy dinner recipe that the whole family will love. I love it because it's easy to prep, cook and clean up (because it's a one-pot meal), and also because I can make a big batch, and the re-heated left-overs are even better over the following week! School lunches! A quick snack! A hassle-free dinner!

A pot luck contribution! Dinner for a sick friend! The possibilities are endless. Though traditional goulash is delicious (we have a recipe for that here), this American twist on an East European classic has a great twist that incorporates our favorite American comfort food flavors without being unhealthy. So cook up a big pot of this hearty American-style Goulash in VitaClay this weekend and you'll be thanking yourself all week long!

Ingredients:

  • 2 lb ground beef (100% grass-fed beef or for best taste, get ground bison/buffalo)
  • 2 large onions, diced (I like red onions, but any type will work)
  • 4 cloves garlic, minced
  • 4 tomatoes, diced (save the juice)
  • 3 cups tomato sauce (make your own!)
  • 2 c broth
  • 2 c pasta (I like this gluten free one; any will work)
  • 1 T soy sauce
  • 1 T no-salt seasoning (I like this one)
  • 1 T sea salt
  • 1 T Worcestershire
  • 1 T sugar (to cut acidity—I like to use coconut sugar)
Directions:
  1. Break up the ground beef into small chunks and add everything into the clay pot
  2. Stir it all up, cover, seal and set to “stew” for 30 minutes
  3. Add pasta and let it cook another 10 minutes, covered and sealed (or until pasta is al dente)
  4. Taste and serve!
