Thick, Creamy Two-Bean Vegetarian Chili

Chili is a amazing, hearty comfort food, and there are so many ways to customize it just how you and your family enjoy. This vegetarian version includes lots of fresh veggies and two kinds of beans for a rich, satisfying meal or a great, warming snack.

Using brothfor the base boosts both the flavor and nutrition in this healthy, hearty chili. If you love chili like I do, you’ll love this twist on the classic tomato-based version. It’s thick and creamy thanks to the mashed/blended beans that give it a rich, thick consistency.

Ingredients:

  • 1 chopped onion
  • 1 chopped green bell pepper
  • 2 ½ t chipotle chili powder
  • 2 t ground cumin
  • 2 c broth
  • 2 16oz cans red beans in mild chili sauce, undrained
  • 1 14.5oz can unsalted fire-roasted diced tomatoes, undrained
  • 2 15oz cans unsalted pinto beans, drained and rinsed

Directions:

  1. Mash half of the pinto beans with a fork or blend them with a blender.
  2. Add all ingredients to VitaClay.
  3. Cover, seal and cook on slow/soup until the mixture has thickened, about 1 hour.
  4. Serve with a garnish of chopped parsley or cilantro
