Thai Peanut Butter Chicken

Ingredients:Slow Cooker Thai Pea-Nutty Chicken

  • 1/ 2 cup smooth peanut butter
  • 1/2 cup crushed peanuts
  • 1 1/  2  cup chicken broth
  • 1/4 cup low sodium Tamarin sauce
  • juice of one lemon
  • 1tablespoon rice wine vinegar
  • 4 crushed garlic cloves
  • 1inch fresh peeled ginger grated
  • 1tablespoon honey
  • 1/2 teaspoon red pepper flakes
  • 1sweet onion chopped
  • 1red bell pepper chopped
  • 1 1/  2  pounds of boneless, skinless chicken (breast and/or thigh)  cubed

To Prepare:

  1. In a food processor combine peanut butter, broth, Tamarin, lemon juice, vinegar, garlic, ginger, honey and red pepper flakes. Process until  smooth.
  2. In your VitaClay slow cooker add onion, bell pepper, and
  3. Poor the peanut butter sauce over all the chicken and veggies. Stir to evenly
  4. Cover and cook on the "fast" setting for 11/2 to 2 hours, until chicken is cooked through but is still NOTE: Overcooking the chicken will dry it out and make it chewy.
  5. Serve over basmati rice
  6. You can garnish with chopped green onion or fresh basil and crushed
