Tasty Marinated Lima Beans in Clay

Discover an amazing, tongue-tingling way to enjoy lima beans in your VitaClay. They’re an excellent source of molybdenum and a very good source of dietary fiber, copper and manganese. Plus, their great amount of folate, phosphorus, protein, potassium, vitamin B1, iron, magnesium, and vitamin B6 are yet another reason why you should include lima beans in your healthy menu. Serve them on a bed of lettuce surrounded by cucumber slices, tomato wedges, and mixed olives, with a sprinkling of chopped parsley and green onions on top. Just another complete healthy meal is ready with VitaClay!

Ingredients:

  • 1 cup dry lima beans
  • 6 cups water or broth
  • 1/2 cup olive oil
  • 1/4 cup wine vinegar or apple cider vinegar
  • 1 teaspoon water
  • 1/4 teaspoon red pepper flakes (or to taste)
  • 1/2 or 1 teaspoon oregano
  • 1 teaspoon fresh mint
  • 1/2 teaspoon sugar
  • Salt and pepper to taste


Directions:
1. Add washed dry Lima beans and water in your VitaClay pot.
2. Set on fast or “Stew” to cook for 1.5 hours, or “Soup”/”Slow” to cook for 2 hours. Or until Lima beans become soft. (Note: if you want to cook longer, pls add 2 -3 cups more water for cooking up to 4 hours.)
3. After the bean is cooked, drain some excess liquid.
4. Add the rest of the ingredients and mix well. Enjoy!
