I have skipped making morning tasty “happy eggs” for a while. Yesterday, i was able to get my favorite “happy eggs” from store. There are a few ways to make tasty eggs-
1. Sauté in green onion and oil, or
2. Braise in clay. Make a bunch for the week. Eat it as a snack or breakfast.
The egg is a powerhouse of disease-fighting nutrients like lutein and zeaxanthin. These carotenoids may reduce the risk of age-related macular degeneration, the leading cause of blindness in older adults. And brain development and memory may be enhanced by the choline content of eggs.
Ingredients
8 organic free range eggs
water to cover eggs
3 tablespoons soy sauce
5 green tea bags or tea leaves
3-4 star anise
Directions
Add all ingredients in your clay pot.
Set on stew to cook for 30 minutes. After cooked, crush cooked eggs allowing flavor to blend in for overnight.
