tasty happy eggs in Vitaclay

I have skipped making morning tasty “happy eggs” for a while. Yesterday, i was able to get my favorite “happy eggs” from store. There are a few ways to make tasty eggs-

1. Sauté in green onion and oil, or
2. Braise in clay. Make a bunch for the week. Eat it as a snack or breakfast.
The egg is a powerhouse of disease-fighting nutrients like lutein and zeaxanthin. These carotenoids may reduce the risk of age-related macular degeneration, the leading cause of blindness in older adults. And brain development and memory may be enhanced by the choline content of eggs.

Ingredients

  • 8 organic free range eggs
  • water to cover eggs
  • 3 tablespoons soy sauce
  • 5 green tea bags or tea leaves
  • 3-4 star anise

Directions

  1. Add all ingredients in your clay pot.
  2. Set on stew to cook for 30 minutes. After cooked, crush cooked eggs allowing flavor to blend in for overnight.
