Instant Crock Pot Slow Cooker

I made this yummy Chicken Tortilla Soup in my VitaClay Instant Crock Pot Slow Cooker for 30 minutes. I used the leftover chicken and it’s broth made the night before, threaded and added the following ingredients. It’s really simple and easy! I used taco seasoning to replace all the spices here! Yum!

Ingredients

2 tablespoons olive oil
1 small onion, peeled and chopped
2/3 cup fresh chopped cilantro, divided
3 cloves garlic, minced
4+ cups chicken broth
2 cups diced tomatoes or "fire roasted" tomatoes
2 cups cooked chicken, threaded
3/4 tablespoon ground cumin
1/2 tablespoon chili powder
1/4 teaspoon cayenne pepper
1-2 bay leaves
1 carrots, thinly sliced
1 cup corn
1 1/2 cups shredded Monterey jack cheese
1-2 avocados, diced
10 ounce Bag of tortilla chips

Directions:
1. Sauté onion in a sauce pan on medium high heat for a few minutes. Then transfer to you VitaClay (optional)
2. Add all ingredients in your VitaClay. Set on stew to cook for 30-40 minutes.
3. Stir in half the cheese and 1 cup crushed tortilla chips.

Garnish with tortilla chips, avocado and cilantro and serve.
