Strawberry Rice Pudding in Clay Pot Cooker

Nothing says Summer like picking fresh Strawberries from a Strawberry patch 🍓

@harryhods and @lysshods created the perfect Strawberry Rice Pudding recipe to enjoy those delicious strawberries with your Vitaclay.

Ingredients:

  • 1 3/4 c milk (can also use milk substitutes such as rice, coconut, or almond milk)
  • 1 T vanilla extract
  • 1 1/4 cups water
  • 1/8 teaspoon salt
  • 3/4 cup jasmine rice (or any long-grain rice)
  • 1/3 cup coconut sugar
  • 2 eggs, beaten
  • 8 oz crushed strawberries

Directions:

  1. Pour 1 cup of milk and the water into VitaClay
  2. Stir in the salt and rice.
  3. Cover and set to “stew" setting for 30 minutes.
  4. In a bowl whisk together the remaining milk, sugar, egg and vanilla.
  5. Stir in the egg mixture and crushed strawberries
  6. Let cook, stirring every couple minutes until the mixture comes to a simmer and starts to thicken. Turn off machine.
  7. Pudding will thicken as it cools. Mix well before serving.
  8. Garnish with strawberries
  9. Serve warm or cold!
