VitaClay Gingerbread Latte: Great for Dessert!

When your holiday party is winding down and everyone is craving a warm after dinner drink. Serve them a Gingerbread Latte. Come to think of it, Santa might love to have this drink with his cookies instead of milk when he makes his runs on Christmas. After all he does have a long night of work and we don't want him falling asleep behind the deer.

I love going to Starbucks in the morning on my way to work, but at $5 for a coffee that can get to be expensive. So we have come up with a recipe where you can make your own Starbucks coffee that won't empty your wallet. You don't even need an espresso machine. This recipe can be made with strong black coffee.

Ingredients:

  • 4 cups of milk
  • 1/2 cup coconut sugar (it adds a great depth of flavor to this recipe compared with white sugar. To go sugar free, use the same amount of xylitol or Swerve instead)
  • 2 teaspoons vanilla extract
  • 1 teaspoon Saigoncinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1/2 cup strong black coffee or shot of espresso

  Directions: 

  1. Add milk to VitaClay cooker and whisk in the vanilla, sugar, cinnamon, cloves and nutmeg.
  2. Cover and cook on "Soup," "low," or "slow" setting for 40 minutes.
  3. Place 1/2 cup of strong black coffee or one shot of espresso in each of four cups
  4. Pour milk mixture over the hot coffee or espresso and garnish with whipped cream, a cinnamon stick and a sprinkle of nutmeg.
