Slow Cooker Chicken Fajitas in Cilantro Lime Rice in Just a Dash

Finally, a flavorful recipe to top with our VitaClay’s Cilantro lime rice! This cheesy chicken fajita is beyond delicious; it’s so easy to toss on the slow cooker and is perfectly cooked in just 30 minutes. If you like, you can also wrap it on lettuce or on low carb tortilla. As for me, I love it with cilantro lime rice. It’s filling and flavorful, great for a full-packed dinner meal.

Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts
  • 8 ounces cream cheese
  • ½ cup prepared salsa, jarred or homemade
  • 1 clove garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 bell peppers, any color- sliced to strips
  • 1 onion- sliced to strips
  • 1 lime cut into wedges
  • 2 cups broth/water
  • Cilantro Lime Rice, for serving

Instructions

  1. Add the chicken breasts, cream cheese, salsa, garlic, paprika, cumin, bell peppers, onion, salt, and pepper in your clay pot. 
  2. Cover and cook on stew for 30 minutes, or until chicken is cooked through and shreds easily.
  3. Shred the chicken with a fork and squeeze the lime over the fajitas.
  4. Stir well to combine the mixture.
  5. Spoon the fajitas over prepared cauliflower rice and top with any additional toppings you like.
  6. Serve hot.
