Simply Delicious Mediterranean Roasted Potatoes with Chicken in 30 Minutes!

Make an easy weeknight dinner the whole family will love with these roasted potatoes with chicken ready in just 30 minutes! My family keeps begging for more of this! Being a mom slash chef, so to speak, gives me more reason to cook what they love. Their delight is overwhelming. With VitaClay, I can do all the cooking so easily!

     



Ingredients:

  • 5-6 red or white potatoes, cut in half or quarter
  • 1/4 cup good olive oil
  • 1/2 cup water
  • 4 chicken breasts
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons minced garlic (6 cloves)
  • 2 tablespoons minced fresh parsley

Directions:
1. Add 1/2 cup water in your clay pot (vm7900 models, add 1.5 cups for vm7800 models).
2. Add all ingredients except chicken and parsley.
3. Set on stew or fast to cook for 30 minutes.
4. While cooking potatoes, thin slices the breasts about 1/4-inch thick. Coat with flour, salt and pepper. Add oil in a sauce pan on a medium high heat. Brown the breast on each side. Transfer to your clay pot and place on top of potatoes. Let it continue to cook throughout the cooking cycle or until potatoes and chicken are cooked through.
