This salsa just makes me feel all vibrant and healthy and in a great mood. You can make some extra for salsa chicken next!
Ingredients:
- 5-6 Roma tomatoes, pulp squeezed out and chopped
- 1/2 a large red onion, chopped
- 1/2 - 1 1/2 jalapeno pepper, to taste (1/2 is very mild, 1 1/2 pretty fiery), seeded and chopped
- roughly 3/4 c fresh cilantro stems and leaves, chopped
- 2 cloves garlic, minced
- 2 medium limes
- 1/2 tsp salt
Directions:
Combine all chopped veggies in a medium bowl. Squeeze in the limes, add the salt and mix.
