Simple Chinese Steamed Fish Recipe for the VitaClay steamer cooker
Fish, or "yu" ,the saying that goes with the Chinese New Year fish dish is “nian nian you yu,” which means “may the year bring prosperity.” The character for prosperity, yu, is a homophone for the word for fish, yu. Families buy a whole fish, which symbolizes unity, and typically steam it with ginger and a light soy sauce. It's also important to leave leftovers for the next day, because this signifies that the prosperity will overflow. Try this steamed rock cod which you can make easily with VitaClay as it functions as a crock pot steamer!
Ingredients - Simple Steamed Fish
1 ½pounds cod or other fillet, in two pieces, or 1 large halibut steak
2tablespoons extra virgin olive oil
Juice of 1/2 lemon
Coarse salt to taste

Mix fish with all ingredients in a ceramic bowl that be fit inside your clay pot.
In your vitaclay pot, add 1 cup water in pot.
Place your fish inside clay pot on top of water.
Set on "Stew" or "Fast" to cook for 20 to 30 minutes.
Ingredients - Chinese style

1 tablespoon ginger strips
1 small hot chili pepper, sliced (optional)
a handful of shredded scallion
1 tablespoon seasoned soysauce for seafood
2 tablespoons oil
Sea salt to taste

In your vitaclay pot, add 1 cup water in pot. Place a steam basket (optional)
Place your fish inside clay pot on top of water or steam basket.
Set on "Stew" or "Fast" to cook for 20 to 30 minutes, or until fish cooked through.
