Quick Easy Gluten Free Clay Crock Pot Zucchini Meatballs

Ingredients:

  • 1 medium onion diced
  • 2 garlic cloves pressed
  • 1 zucchini shredded
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 teaspoon oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp parsley
  • 2 eggs
  • 2lbs ground beef
  • 1 jar sauce
  • 1/4 -1/2 cup beef broth

Directions:

  1. In a large bowl add all ingredients except for the sauce and broth.
  2. Mix and roll into medium sized meatballs.
  3. In the @vitaclay Stock Pot place some sauce then meatballs, sauce then meatballs until all meatballs are added and finish with the broth on top.
  4. Cook on Stew for 1-1.5 hours. Midway during cooking stir to check on the meatballs and ensure even cooking.
  5. Serve alone, on rice, pasta or freshly baked bread.
