Anthocyanins, the powerful antioxidants that give red cabbage its vibrant color, have been shown to slow the formation and even kill already-formed cancer cells.

INGREDIENTS

  • 1 tsp sea salt
  • 1/4 tsp black pepper (omit for AIP)
  • 1 onion, diced
  • 3–4 cloves garlic, minced
  • 1 cup carrots, roughly chopped
  • 1 cup cauliflower, riced
  • 1 medium green cabbage, chopped (about 4 cups)
  • 5 cups broth 
  • 1 1/2 cup tomato sauce (sub nomato sauce for AIP)
  • Juice of half a lemon
  • 2 tsp oregano
  • 2 tbsp parsley, chopped

DIRECTIONS:

1. Add onion garlic in a sauce pan over medium heat to sauté until onion becomes translucent. Transfer to your clay pot cooker.

2. Add the rest of ingredients to your VitaClay pot and stir to combine.Set on “Stew” or "Fast" to cook for 30 - 40 minutes. 

3. Spoon into bowls, top with fresh parsley.
