Pollo Asado Dinner with Whole Grain Mix Plus my Favorite Millets!

The phosphorus provided by millet plays a role in the structure of every cell in the body.

How do I cook millet?

  • 1 cup millets
  • 1 cup whole grain mix
  • 3 cup water

Set on Brown rice cooking and relax.

How to cook pollo Asado?

Ingredients:

  • 1 whole organic free range chicken, cut into 8 pieces
  • 1/2 cup olive oil
  • 6 garlic cloves minced
  • 2 tsp ground cumin
  • 2 tsp salt
  • 2 tsp ground black pepper
  • 2 tsp Mexican oregano
  • 2 oz achiote paste optional
  • 1/2 cup fresh orange juice
  • 1/2 cup fresh lime juice

Achiote Paste Alternative

  • 1.5 tbsp paprika
  • 2 tbsp apple cider vinegar
  • 2 tsp dried Mexican oregano
  • 4 garlic cloves, minced
  • 1/2 tsp ground cumin

Directions:

  1. Heat oil in a skillet over medium-low heat. Add garlic, cumin, salt, pepper, oregano, and half of the achiote paste and cook for several minutes, stirring. Remove from heat and allow to cool. Set aside.
  2. Put cooled achiote garlic mixture, orange juice, and lime juice in a bowl container or ziplock bag. Add chicken pieces, seal bag, and massage chicken and marinate 2-4 hours or overnight.
  3. Transfer marinated chicken including 1 cup of marinate juice or water in your clay pot.
  4. Set on stew (7900) or slow (7800 model, see note) to cook for 2 hours.

Note: If you use the 7800 model, add 2 cups of water to start. Until juice comes out of the chicken, you may scoop some out but always ensure to have at least 1 qt. of liquid inside at all times.
