Immunity boosting Mushroom Soup

While there are a variety of mushrooms out there, they share important health and immune system boosting effects. Mushrooms are a good source of fiber, protein, vitamins, and antioxidants. In particular, they are known for being high in vitamins B and D which promote high energy and bone growth respectively and contain antioxidants which have anti-inflammatory effects. 

I used maitake, beech,trumpet mushrooms, shiitake and portobello mushrooms, but you can really use any mushroom in this easy soup recipe. 

Ingredients

  • 1 lb of mixed mushrooms
  • water 
  • Salt (optional)
  • Oil (optional)
  • Bonito flakes (optional)

Directions

  1. Fill the pot 3/4 full with water.
  2. Add mushroom mix and any optional ingredients
  3. Cook on soup for an hour
