Make Chipotle-Style Citrus Rice in VitaClay!

I love the rice at Chipotle--it’s so fresh, citrusy and buttery, and tastes really great! This Weight-Watcher recipe adapted for VitaClay is a lot like the rice at Chipotle--I like it even better!

Citrus rice goes really well with pretty much anything, but it’s especially delicious with chicken or fish. Add a side of veggies and you have a full-on 3-course meal!

If you’ve never made rice in VitaClay, you’re in for a treat. Even plain rice comes out amazing in clay: something about the taste and the texture is improved when it is cooked in clay. We did some sample events at an Asian grocery store, and everyone who tried it commented on how good the rice was. These are people who eat rice every day!

This citrus rice will be a favorite addition to your weekly meal routine. I like to make a big batch and add it to dishes throughout the week. Sometimes I even chop up some veggies and add them to the clay pot with the rice to cook--adds nutrition and flavor all in one!

Ingredients:

  • 1 t unsalted butter
  • 1-2 finely chopped shallots
  • 2 c brown rice, uncooked
  • 4 c broth
  • 2 T Coconut oil and/or butter
  • ¼ t real salt
  • ⅛ t black pepper
  • 1 t fresh lemon juice
  • 1 ½ t lemon zest
  • Finely chopped fresh cilantro

Directions:

  1. Rinse rice.
  2. Sauté brown rice with shallots and butter on the stove: medium high heat for 2-3 minutes. (Optional)
  3. Transfer rice to Vitaclay rice cooker
  4. Add broth, coconut oil, salt, and pepper to the Vitaclay pot.
  5. Set on " brown rice" setting
  6. Once the machine beeps, allow the rice to “rest” for 10-15 minutes before opening.
  7. Add lemon juice, zest and chopped cilantro; stir to incorporate.
  8. Serve: adding more lemon zest for garnish, if desired.
