Make Ahead Taco Meat: Easy in Clay!

Suitable for VitaClay Models VF7700 & VM7900 series. 

The thing I miss sometimes about never eating anything processed in a box or can is that everything has to be made from scratch.  I don't always have time to whip something up from scratch every day, though. So I like to have some things prepared in the freezer for a quick back-up meal, such as meatballs or this taco meat.

It’s great to have some cooked ground meat on hand for whatever dishes you’d like to cook up during the week. Make a batch up in your VitaClay slow cooker on the weekend and use it in recipes all week long.You can make a quick and easy meal by adding this meat to tacos, quesadillas, burritos, sloppy Joe's, shepherd’s pie, stews and stir fries.

Or stir it together with some rice or pasta for a quick hamburger-helper-like meal. The seasoning gives it a kick and adds a lot of flavor. You can even freeze it for a few weeks or add it to a casserole for a pot luck.

Ingredients:

  • 4 lb. grass-fed bison or ground beef
  • 3 cups broth
  • 1 large onion, chopped
  • 10 cloves garlic, minced
  • 1 tomato, chopped (or use tomato sauce)
  • ¼ cup Worcestershire
  • 6 T of your favorite taco seasoning (or make your own)
Directions:
  1. Add all of the ingredients into the VitaClay pot. Break up the ground meat with a fork and stir with other ingredients
  2. Close, seal and set to “stew,” cooking for 30 minutes
