Jerk Chicken

Marinade Ingredients:

4 chicken thighs – 2lbs

1 T coconut oil or butter

1 t cinnamon

½ t allspice

1 t coriander

½ t salt

Saute Ingredients:

2 T Lemon Juice

2 T Molasses

1 T White Wine Vinegar

1 T Orange Juice

1 T soy sauce

1 t Black pepper

2 cloves garlic

2 T Butter

1 t salt

¼ c shallots

2 Tablespoons Ginger

½ c Chicken Stock

Garnish

1/4 Cup Scallions

2 Tablespoons Cilantro

1 Cup Chopped Pineapple

3 Tablespoons Lime Juice

Jalepeno (Optional)

Directions:

  1. In a bowl, place the chicken with oil, and spices. add salt and mix until evenly coated. Marinate overnight.
  2. Sear Chicken in a Sauce Pan, golden brown on each side and season with salt. Place them in the vitaclay.
  3. In the same sauce pan, remove leftover oil, and add butter, shallots, and salt. Cook for 4 mins and add ginger and garlic. Saute for 3 mins and add chicken broth. Turn off the heat. Add lemon, orange, soy, and black pepper. Transfer to VitaClay cooker (VM7900 or VF7700)
  4. Set your VitaClay to “stew” for 30-45 minutes, until chicken is done.
  5.  Make your Pineapple salsa by combining all the ingredients in a bowl. Pour over chicken in VitaClay.

*Recipe intended for VitaClay models VM7900 or VF7700 ONLY. Please do not try this recipe in the stock pot, as there is not sufficient liquid.
