Immune and Energy Boosting Noodle and Veggie Soup in Bone Broth or Chicken Broth

Had a busy weekend? Or don’t feel like cooking on Monday? Or feeling not too hungry? Or Need an immunity boost? Here is an easy fix- spicy sour mung bean noodle soup in bone broth for keto or weight loss. Simply add dry noodles, bone broth and veggies to cook in VitaClay for 20 minutes! And it’s keto! Or you may add anything you like to add in! Maybe lose weight with Zoodles, Squash, or cauliflower! Adding lemon juice for immunity, white pepper for blood circulation to boost energy. Yum!

Ingredients:

  • 1 qt bone broth or chicken broth
  • 1 tablespoon Garlic flavored olive oil
  • 4 oz mung bean noodle
  • 1 medium tomato, sliced
  • 1 cup spinach (optional)
  • 1/2 lemon juice
  • Sea salt, white pepper to taste
  • 1 Scallion, chopped for garnish

Directions:

  1. Add all ingredients except mung bean noodle, spinach and garnish in your VitaClay pot.
  2. Set on “stew” or fast to cook for 20 minutes.
  3. When the soup is boiling, add mung bean noodle and spinach. Cover your clay pot to let it simmer for 5 minutes or until it is softened.
  4. Garnish with scallion and serve. Enjoy!
