How to Cook Soy Beans for Nattos in VitaClay "Instant" Crock Pot

Ingredients

4 cups soybeans

Water

Directions

  1. Wash the soybeans and soak for 9 to 12 hours. Be sure to use approximately 3 parts water and 1 part soybeans to allow for expansion. You will end up with 8 to 12 cups of beans.
  2. Drain the beans from the soaking water. Add the beans in your VitaClay pot, fill with water to cover the beans about 3 inches above the beans. Set on Stew to cook for 1 or 1.5 hours or until beans reached to the desired tenderness. If you use our stock pot, VM7800 models, cook on Fast for 1 hour or on Slow for 1.5 hours. Let it sit in WARM for additional time as needed.
