Ingredients:
1 onion, chopped
1/4 cup olive oil
2 carrots, diced
2 stalks celery, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1 bay leaf
1 teaspoon dried basil
2 cups crushed tomatoes
2 cups dry lentils
8 cups of water
1/2 cup spinach, rinsed and thinly sliced
2 tablespoons vinegar
salt to taste
Directions:
1. Add all ingredients in your VitaClay pot except onion garlic. 2. Set on soup or stew to cook for 1 hour. 3. Sauté onion garlic in a sauce in oil for a few minutes or until translucent. Transfer to your clay pot. Close cooler cover and continue to cook for the rest of the time. Serve hot.
