Ham & Bean Soup With Greens

Ingredients:
  • 2 cups soaked overnight great northern beans
  • 4 cups of water
  • 1 (3 lb) leftover meaty ham bone, trimmed of excess visible fat
  • 1 cup chopped carrots
  • 1 cup chopped celery 
  • 1 cup chopped yellow onion
  • 1 Tbsp minced garlic 
  • 1 Tbsp chopped fresh thyme leaves
  • 4 cups unsalted chicken broth
  • Salt and pepper
  • 3 Tbsp chopped fresh parsley
  • 1 cup of kales

Directions:

  1. Add all ingredients to your vitaclay pot. Set on soup setting for 1 hour or 2 hours.

  2. Remove ham and shred. Discard ham bone and excess fat.

     3. Add shredded ham to slow cooker along with 1 cup water and parsley, stir.             Serve warm.

 

 

(Optional) Add your green in the last 10 minutes of cooking before serving.
