glutenfree ham beans soup

Another version of gluten free ham beans soup with northern beans, not from a can but in my Vitaclay clay pot , ultra hearty, and with minimal fresh ingredients. Yum!😋

INGREDIENTS:
serves 5-6
  • 2 Tablespoons extra virgin olive oil
  • 1 large carrot, chopped (1/2 cup)
  • 1 stalk celery, chopped
  • 1/2 onion or 1 large shallot, chopped
  • salt and pepper
  • 2 cloves garlic, pressed or minced
  • big pinch dried thyme
  • 2 Tablespoons gluten free flour blend
  • 4 cups chicken stock or water
  • 3 cups soaked Great Northern Beans
  • 1lb ham steak, cubed


DIRECTIONS: 

1. Cook beans first: add only ingredient listed stock or water, ham bone and soaked beans in your clay pot. Set to cook for 2 hours.
2. Add the rest of ingredients in the cooked beanpot and set on stew or fast for 30-40 minutes
