I assume people who love mac and cheese are truly happy people. That’s how I feel about mac and cheese. It must have been sent from the heavens for human pleasure. This salty and gooey and creamy comfort food is absolutely delicious in every single way and just by the thought of it makes me hungry. The soft texture and of pasta, the creamy, rich flavor of the cheese, and oh, how about 4 cheese? I can’t imagine what is it not to love about mac and cheese?

Ingredients:

  • 2 cups elbow macaroni
  • Salt and fresh ground pepper to taste
  • 1 1⁄2 cups chicken stock
  • Fresh herbs (parsley, oregano, marjoram) for garnish
  • 1 1⁄2 cups evaporated milk, divided
  • 4 cups shredded cheeses (combine sharp cheddar, fontina, mozzarella and Parmesan

Directions:

  1. In the VitaClay® pot, combine the macaroni, the stock and 1 cup of the evaporated milk. Place the clay lid on the pot and close the cooker.
  2. Set on “stew” for 30 minutes.
  3. At the end of the cooking time, add the remaining 1⁄2 cup of evaporated milk, cheese, salt, and pepper and stir to combine. Wait for 15 minutes on the warming cycle.
  4. Sprinkle fresh herbs for garnish and serve.
